For those who want a savory, intense white with longevity characteristics, but who do not sacrifice freshness, Duca di Salaparuta offers its personal interpretation of Grillo.

Made with grapes from the Tenuta di Risignolo estate, this is one of Duca di Salaparuta’s most versatile whites.

In 2024, Sicily experienced a dry autumn and winter, followed by a dry spring. The summer was hot, with no rainfall and significant temperature variations between day and night.

Harvest

Th grapes were harvested from the end of August to the beginning of September.

Vinification and Ageing

Upon arrival at the winery, the grapes are destemmed and pressed before fermenting at a controlled temperature of 16-18°C. When the must reaches approximately 3% alcohol, about 20% of it is transferred to oak barriques to complete fermentation, while the remaining portion continues fermenting in stainless steel tanks. After fermentation, both portions of wine continue aging—one in tanks and the other in barriques—on their lees for several months. Once the aging period is complete, the two wines are blended to create Kàdos, which then undergoes bottle aging for at least
one month before release.

Tasting Notes & pairings

Straw yellow colour with greenish tinges.

Floral aromas prevail on the nose, with an intense bouquet of tropical fruit and Sicilian citrus fruits, followed by light notes of vanilla.

Rich, velvety, well-structured and pleasantly tangy on the palate.

It goes well with fish starters and raw seafood, as well as vegetable-based main courses.
