From solely Insolia grapes comes Colomba Platino. First produced in 1959, it is one of the most well-known white wines among lovers of Sicilian oenology and a wine in which the strong bond with its place of origin is clearly perceived.

Between late August and early September.
Vinification and Aging
Very soft pressing of the grapes, using only the free-run juice. Slow fermentation at 16 – 17 °C for about fifteen days, followed by extended contact with its own lees.
Aging: at least one month in bottle at controlled temperature.
Tasting Notes & Pairings
Bright straw yellow with
greenish reflections.
Intense, pleasantly fruity, with strong character.
Fresh, harmonious, and persistent.
Excellent with shellfish, seafood, and fish dishes in general.
