A summer dish par excellence, pasta salad is the perfect addition to an inviting, cheerful table. Fresh, colourful and tasty, spicy pasta salad with chicken and chicory accompanied by a glass of Corvo Bianco is sure to make everyone happy.
To serve 4:
– 350 gr wholewheat short pasta shapes
– 400 gr chicken breast
– 300 gr chicory
– Sun dried tomatoes in oil
– Chilli pepper
– 1 Lemon
– Salt
– Extra virgin olive oil
Step 1 – Wash the chicory and cook in plenty of salted water. Drain and toss lightly in a pan with oil and chilli pepper. In the meantime, cook the wholewheat pasta in salted water, drain while still al dente and run under a cold tap to halt the cooking process.
Step 2 – Cook the chicken breast (under the grill or in a pan) with a pinch of salt and pepper, let it cool and cut into thin strips. Drain the dried tomatoes and cut into strips.
Step 3 – In a bowl, mix the pasta with the chicory, chicken, dried tomatoes and a dressing of olive oil and lemon juice. Serve on a large dish and let diners help themselves.
