For a refined and definitely unconventional aperitif, try Florio Marsala wine , served chilled and combined with some of the Italian food excellence. The austerity of Marsala Vergine wines , such as Baglio Florio and Terre Arse, served at 8-10°, is a perfect pairing with rich and savoury cheeses, like Parmigiano Reggiano or Grana Padano, but also with smoked fish and bottarga (fish roe). For those who love intense flavours, the more complex Marsala wines, like Donna Franca and Targa Riserva, served at 12-14° and paired with strong blue cheeses, like gorgonzola, stilton or roquesfort, provide a pleasant, worth tasting contrast.
